Vegetable Stir Fry With Egg Rolls for Dinner!

My tummy almost made me forget to take a picture.

Stir Fry Ingredients:
1/2 red bell sliced
1/2 small onion sliced
1 1/2 cup chopped broccoli
5 mushrooms sliced
1 carrot sliced
1/2 med zucchini sliced
handful of peas
1/2 tsp fresh ground ginger
1/2 chopped cabbage
1 tlb soy sauce
salt to taste
Olive Oil (to cover bottom of pan)

Egg Roll Ingredients:
Egg Roll Wraps
1 cup broccoli stem shredded
1 cup mushrooms finely chopped
1 cup zucchini shredded
1 cup shredded carrot
1/2 tsp fresh ground ginger
1 tsp soy sauce
dash of salt to taste
1 1/2-2 cups cabbage shredded

For the stir fry saute the onion, bell pepper, cabbage and habanero for about 2 minutes then add the ginger and the rest of the veggies. Saute the veggies for a while sprinkle with a little salt. Do not add the soy sauce until you are ready to put a top on it to let it steam a bit. Make sure the temperature is lowered when steaming. You do not want to put a lot of soy sauce. Just a hint of it is enough to set it off. Cook until the veggies are as tender as you like them. Do not over cook or burn.

For the egg rolls just take all your ingredients and mix them up in a large bowl so you can get some of everything in the egg roll easy. Grab some egg roll wraps, found at most stores. Put your mix in the middle, fold and wrap like a burrito. Trial and error, you will see how much to put in it after your first 1 or 2. The wrap is pretty sturdy as long as it does not get to wet. Use a dab of water along the end to close it. Make sure your oil is warm/hot and keep flipping them until they are golden brown on each side and somewhat crunchy. Less than an inch of oil, like half an inch. Check out the picture.

Pasta:
Get your favorite pasta. I chose an organic spaghetti from my local market and followed the instructions on the box.
